We were invited for a Masterclass – how to make dumplings, which focuses on the Asian delicacy, its history, evolution and diversity.
Food lovers and aspiring chefs alike will find the class insightful as well as flavorful, as Vietnam-born Chef Ta Van takes students on a culinary journey through China’s most popular tea house snack – Dim sum.

Crispy Chicken and Prawn Wonton:
60g Chicken thigh (clean and mince)
60g Prawns (clean and mince)
40g Shitake mushroom (washed and chopped)
20g Coriander (finely chopped)
20g Shallots (finely chopped)
15g Spring onion (finely chopped)
10ml Fish sauce
20ml Sweet and sour sauce
40g Wonton sheet
30g Dry shitake mushrooms
In a medium size mixing bowl, mix the minced chickenand minced prawn with all chopped vegetables and seasoning (salt, sugar, shitake mushrooms, coriander,
shallots, spring onion and fish sauce) for at least 3 minutes or until ingredients are well mixed.
Stuff a tablespoon full of the mixed ingredients onto asingle wonton sheet. Wrap it around to lock the stuffing inside the sheet.
Deep-fry your packages until brown and crispy. Serve them hot with sweet and sour sauce. Serves 6 pieces.
Chicken Dim Sum.
100g Chicken thigh (minced)
30g Shitake mushroom (finely chopped)
10g Spring onion (finely chopped)
10g Coriander (chopped)
15g Onion shallot (finely chopped)
30g Bok choy (cut small)
20ml Soya sauce
5ml Fish sauce
30g Wonton sheet
2ml Oyster sauce
2g Chicken powder
In a medium size mixing bowl, mix the minced chicken with all chopped vegetables and seasoning (salt, sugar, fish sauce, garlic and oyster sauce) for at least 3 minutes or until ingredients are well mixed.
After which, set aside in the chiller for 15 minutes. Stuff a tablespoon full of the mixed ingredients onto a single wonton sheet. Wrap it around to lock the stuffing inside the sheet. Once finished, place the stuffed wonton sheets in a steamer. Steam for about 6 minutes.
Serve with sautéed bok choy, chinese cabbage, mushrooms and soya sauce. Serves 5 pieces.
What to order?
Don’t miss the sushi platter, the seafood and chicken dumplings along with the Crab Cakes. For drinks, we just couldn’t get enough of the Green Tea Cocktail and for desserts, the Vietnamese Banana Sago. Delish!
